College Cooking: Chicken Alfredo Bake

If you’ve been reading for a while, then you know that I struggle in the kitchen. I cannot cook. Truth is, I’ve never really attempted. Sure, I made banana bread and accidentally put the entire egg in it (yes, including the shell). I tried my hand at my mom’s infamous red beans and rice dish and utterly failed (forgot 3 ingredients, used water instead of tomato sauce, no spices, etc.).

With all of that said, my parents can’t continue cooking for me forever and one can only eat out so much. I began to search for recipes that I could try – and would not completely butcher.

And, y’all. I found one! Let me present to you: Chicken Alfredo Pasta Casserole.

But, wait. There’s more. This recipe is a dump and bake. Meaning: you dump all of the ingredients in the baking dish and pop it into the oven to bake. It doesn’t get much more simple than that.

The recipe I used is THIS one, although I did change it slightly.

Here’s what you need:

16 ounces – uncooked pasta (I used rotini, but you could use whatever you want)

22 ounces – alfredo sauce

3 cups – chicken stock

2 cups – diced or shredded (rotisserie) chicken

2 teaspoons – minced garlic

2 cups – shredded mozzarella

*the recipe I used also recommends parmesan and fresh herbs for garnish, but these are totally optional.

Now, here’s the hard EASY part: cooking it.

Dump the pasta, sauce, stock, chicken, and garlic into a baking dish. Pop it in the oven to bake for 30 minutes, or until your pasta is al dente (it took me about 40 minutes.) After your 30, or 40, minutes is up, take the dish out, throw on the cheese, and bake for about 10-15 more minutes.

Voila! It’s delish!

When I created this, I ended up using 29 ounces of alfredo sauce (two 14.5 oz containers), eyed a box of chicken stock (could have been more than 3 cups; could have been less) and used 2 cups of shredded Tyson chicken. And, it turned out SO GOOD! Next time, I think I’m going to add more chicken and mozzarella. And, yes… I said NEXT TIME! It was a total win and it was SO EASY!
